Strawberry Muffins

Ingredients:

  • 1 carton Kate Farms® Nutrition Shake Strawberry or Standard 1.4 Strawberry 

  • 1/3 cup unsweetened applesauce (sub: granulated sugar)  

  • 2 tbsp. Olive Oil  

  • 1 tsp. vanilla extract  

  • 2 cups gluten-free flour (sub: all-purpose flour) 

  • 2 and ½ tsp. baking powder  

  • 1 pinch of salt  

  • ½ lb strawberries, diced 

Directions:

Preheat oven to 350F and lightly grease muffin tins or line with muffin tray liners. In a large bowl, add Kate Farms Standard 1.4 Strawberry, or Nutrition Shake Strawberry, applesauce, olive oil, and vanilla extract. Stir until combined. In a separate bowl, whisk together flour, baking powder, and salt. Slowly add dry ingredients to wet ingredients, mixing until just combined. Fold in diced strawberries. Using a ¼ c measuring cup, fill muffin tin tray and bake in the oven for 30 minutes, or until toothpick comes out clean. Let cool for 1 hour before serving.
